Use sqlite by default in docker

This allows for easy setup with no extra configuration.
Also update docs to reflect the new and easy way to run PowerDNS-Admin.

Step 1: Update the configuration

To use docker secret feature it is possible to append `_FILE` to the environment variables and point to a file with the value stored in it.
